During a cupping session, coffee is scored on aspects such as cleanliness, sweetness, acidity, body and aftertaste.
According to the official protocol, hot water is poured directly over freshly roasted and ground beans in a cup and left to steep for 3-5 minutes. The infusion is then stirred and the foam layer is removed.
