In the community of The Boardin the region of Cabañas, is located in the El Maguey Farmwhere the third-generation coffee grower Eraldo García Martínez grows trees of the Icatú variety. The name of the farm is derived from the abundance of maguey plants in the area, the leaves of which were used by Eraldo's ancestors to build the roofs of their ranches during the harvests.
Eraldo is part of COMSA since 2012, a period which, as he himself states, "It has allowed me to learn a lot about organic agriculture, which has helped me to improve the quality, productivity and care of the soil"..
The grains on his farm are processed in a way that naturalThis means that the harvested cherries are dried in the sun with their pulp, allowing the fruit flavours to concentrate. This process is responsible for the characteristics notes to mora of this exceptional coffee.
