In the community of El Tablón, Cabañas, is the Finca El Maguey, where 3rd generation coffee farmer Eraldo García Martínez grows coffee trees of the Icatú variety. The name of the farm comes from the many Maguey plants that grow in the area. Eraldo’s ancestors used the leaves of the plants to build the roofs of their ranches for the coffee harvesting seasons.
Eraldo has been a member of COMSA since 2012, a period that he says “has allowed me learn a lot about organic agriculture which is what allows me
to improve the quality, productivity and care of the soil”.
The coffee beans on Eraldo’s farm are naturally processed, which means the picked coffee berries are allowed to dry out in the sun, this is what gives the beans the blackberry notes.
