What is the best-before date for coffee?
Although coffee technically does not expire, ideally it should be consumed within 6 weeks after roasting dateThis is when it is at its freshest. After that time, it begins to lose its tasting notes.
Should I keep coffee in the fridge?
No. If your coffee is unopened, you can keep it in the freezer to prolong its freshness. Once opened, store it in an unopened cool, dry and away from light..
What is cupping?
The cupping is the cupping technique used to evaluate speciality coffees. It is the method used by producers, buyers and roasters around the world to analyse the quality of a batch of coffee.
During a cupping session, coffee is scored on aspects such as cleanliness, sweetness, acidity, body and aftertaste.
According to the official protocol, hot water is poured directly over freshly roasted and ground beans in a cup and left to steep for 3-5 minutes. The infusion is then stirred and the foam layer is removed.
The coffee should be cooled before cupping to avoid burns and to allow the flavours to express themselves. Two spoons are used: one for pouring from the cup and one for pouring into the mouth.
What is speciality coffee?
The speciality coffee is the term used to refer to the highest quality coffee available, covering the entire supply chain from origin to cup.
The term was first used in 1974 by Erna Knutsen in the magazine Tea & Coffee Trade Journal.
According to the most widely accepted definition, a speciality coffee must obtain 80 points or more on a scale of 100, based on the cupping sheet for the Specialty Coffee Association.
Factors such as taste and defects influence this score. For example, coffee comes from a cherry that must be fully ripe to roast properly. If it is not, it does not roast well and is considered a defect.
For this reason, specialty coffee cherries are collect by hand to minimise defects.

How do you roast your coffee?
- At Nerja Coffee Roasters we believe that each type of bean has an ideal roasting temperature that brings out its best flavours.
- When we receive a new origin, we roast and taste it in different ways, letting the bean tell us what it needs.
- This is our favourite part of the process. We do the cupping to find out what flavours the bean brings.
- We find different profiles depending on how it is roasted, and select the one we think you will enjoy the most.
- That is why your opinion is super important to usbecause we want you to enjoy each cup as if it were the first.

When was your coffee roasted?
Our coffee is only sold for one week after roasting to ensure maximum freshness.
Where do you buy your coffee beans from?
At Nerja Coffee Roasters we buy all our coffees under Fairtrade standards through Spanish distributors.
We select our seasonal grains from regions such as Africa and South America.
We seek to maintain consistency in our range, but we also give priority to organically certified coffees.
As speciality coffee is grown in small lots, it is natural for it to vary from harvest to harvest.
